HCG Phase 2 Recipe of the Month: Salmon Lettuce Wraps

HCG Phase 2 Recipe: Salmon Lettuce Wraps
This recipe is great not only because it’s low in calories and high in protein but it’s also rich in antioxidants and omega-3’s. This anti-inflammatory powerhouse is a win for your health, skin and waistline.
Ingredients
- 12oz salmon
- a small bunch cilantro
- 1 garlic clove
- 1 tbsp ginger
- 8 asparagus spears
- 2 carrots
- 3 scallions
- 1 zucchini
Serve and garnish with
- lemons
- flax seeds
- black pepper
- a dash of salt
- a head of lettuce
- tomato
- cucumber
- avocado
Instructions
- Julienne carrots and scallions. Cut zucchini into small cubes. Mince garlic, fresh ginger and cilantro. Remove stems from asparagus and slice the spears into 3 parts. Cube the salmon.
- In a large nonstick pan, cook salmon at medium-high heat, covered. Add 1-2 tbsp of water so that the salmon doesn’t stick. After 1-2 min add asparagus (at this step make sure, there’s no water in the pan!) and cover again for 2 min.
- Add ginger and garlic, stir.
- Once fragrant, add carrots, scallions and zucchini. Stir without the lid for 2 more minutes (or until the salmon is done). Turn off the heat and add cilantro.
- Assemble the lettuce wraps with the salmon filling you just made, top with some cucumbers, tomatoes and avocado. Finish it up with some little flax seeds, a splash of lemon juice and a dash of salt and pepper.
