HCG Cauliflower Soup Ingredients
- 16 oz grilled chicken breast, cubed
- 4 cups of low-sodium chicken broth
- 8 cups of chopped roasted cauliflower (or substitute riced cauliflower for a different texture)
- 1x large yellow onion, diced
- 3 tbsp garlic powder (or fresh grilled cloves for added flavor)
- 2 tsp paprika
Cooking Directions
In a saucepan, sauté onions and spices. Add chicken breast and cook at high temp, until chicken edges are golden brown. Add chicken broth and simmer on low.
Meanwhile, toss cauliflower chunks in salt and pepper, then roast at 400F for 10-15 minutes, or until slightly crispy. Add cauliflower to the broth, then add salt and pepper to taste. A touch of red chili powder is a good way to add some extra kick.
Garnish with parsley, then serve!
