HCG Phase 2 Recipe: Chicken Cacciatore

This recipe fits the guidelines of a Phase 2 recipe by focusing on lean protein, adding flavor with fresh herbs and spices and cooking it in chicken broth instead of oil and butter. This hCG Chicken Cacciatore recipe is so good, it’s a hit with the whole family. Here is a “family-sized” recipe that can easily be divided into individual sized containers for leftovers or lunch the next day.
HCG Phase 2 Recipe: Chicken Cacciatore
Ingredients:
- 6 (3.5 oz) pieces of chicken breasts or tenders
- 3-4 tablespoons chicken broth, for sauteing the chicken
- 3 teaspoons salt
- 2 teaspoon freshly ground pepper
- 1 medium onion, chopped
- 3 garlic cloves, chopped
- 1.5 cups chicken broth
- 1 (28oz) canned diced tomatoes with juice
- 3 tablespoons capers
- 1.5 teaspoons oregano
- Handful of fresh basil coarsely chopped
- A few pinches of red pepper flake, optional
Preparation:
- Season thawed chicken with half of the salt and pepper.
- In a large heavy saute pan, heat the 3 tablespoons of chicken broth over a medium-high heat. Add the chicken pieces to the pan and saute just until brown, about 3-4 minutes per side. If all the chicken does not fit in the pan, saute in 2 batches or more adding more chicken broth if it evaporates too quickly. Please note, the chicken isn’t fully cooked yet.
- Transfer the chicken to a plate and set aside. Add the onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes.
- Add the remaining broth, salt and pepper and red pepper flakes (if using) and simmer until reduced by half, about 4 minutes.
- Add the tomatoes with their juice, capers, oregano and about half of the basil. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over low-medium heat until the chicken is just cooked through.
- Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce.
- Spoon the sauce over the chicken, then sprinkle with the remaining basil and serve.
