HCG Phase 2 Recipe of the Month: Grilled Skirt Steak Skewers

Q: What is the hCG Meal Plan?

HCG Phase 2 Recipe: Grilled Skirt Steak Skewers
Skirt steak is one of our very favorite cuts. It’s not the most tender meat that is on the market, and nor is it the most expensive. But because skirt steak is slightly fattier than similar cuts like flank steak, it is a bit more forgiving when thrown on the grill.
This recipe involves slicing a raw skirt steak into strips, marinating it, then putting it on a skewer and grilling it. It’s the kind of dish that will not only keep you from breaking your diet plan, but the mere smell of it will have the neighbors come knocking.
Ingredients:
- Skirt steak
- 1 cup soy sauce
- 2 tbsp red wine vinegar
- 2 tsp red chili flakes
- Slice or fresh ginger (or pinch of dried ginger)
- Salt & pepper
Preparation:
Prepare the marinade by combining the soy sauce, vinegar, chili flakes, and ginger in a bowl. Whisk together and set aside. (Note: Most recipes will ask for some olive oil in the marinade as well, but the extra calories would make it a dealbreaker for hCG Phase 2.)
Next, use a sharp serrated knife to slice the skirt steak into strips that are about 1” thick. Place the strips in the marinade. If necessary, set a plate or bowl on top of the steak to make sure that it is entirely submerged.
Be sure to marinate for a minimum of 30 minutes, but 2 hours will provide more flavor. Anything more than that and you’re not gaining any more flavor. Be sure to soak your wooden skewers as well so they don’t burn on the grill.
After marinating, remove the strips and place them onto the skewers, then sprinkle with salt and pepper.
Cooking:
A hot charcoal grill will provide the best flavor for skirt steak. But you can cook these over propane as well. Just remember that your 1” strips will cook very quickly. Searing them on high for 2-3 minutes should get the job done.
Garnish with some extra red pepper flakes if you don’t mind the extra heat!
