HCG Phase 2 Recipe of the Month: Summer Apple Chicken Salad

Perfect for Phase 2 of HCG, this is a recipe designed to maximize flavor and texture while cutting out the empty calories of a more traditional mayo-based dressing.
HCG Phase 2: Recipe Guidelines
It’s important to remember that the closer you stick to the meal plan, the easier it will be to drop pounds with HCG. This means ensuring that your recipes adhere to the approved foods list, which generally means high protein and low to no fat.

Ingredients: HCG Apple Chicken Salad
- 5 oz grilled chicken, diced into small cubes
- 1 red or green apple, diced
- 3 stalks of fresh celery
- 3 tablespoons of lemon juice
- 1/8 teaspoon cinnamon
- Pinch of nutmeg
- Pinch of cardamom
- Salt to taste
- Stevia to taste
- 2 lemon wedges
Begin by grilling your chicken breast. We recommend grilling enough chicken for several days, as this makes it easier to stay on track. Remember to season your chicken breast for full effect, and use a hot grill to bring out the best flavors.
The next step is simple: Just mix all the ingredients in a large bowl, including the juice from 1 lemon wedge. Chill for 20-30 minutes, and serve with the fresh juice of the second lemon wedge.
This recipe is best enjoyed fresh, but the salad should stay crisp and enjoyable for up to 3 days. If you are planning on making a large batch, add some extra lemon juice to the mix to help prevent oxidization (browning).
Regarding the spices, feel free to add more or less to taste. Remember: the whole point is to enjoy the food you’re eating, so feel free to make it your own.
